The good news though, is that spring is on its way. Yes, I know it's cold, but there are so many shoots and leaf buds and birds singing that I feel positive that it must be just around the corner.
I'm thinking a smoothie might be just the thing to celebrate the sunny days we've been having.
Now, it would be downright rude to drink a tropical or summer berry smoothie. Whoa there! Premature. But what do you think about a gently earthy beetrooty version, sweetened up with a handful of blueberries and banana?
It won't make spring come any quicker, but there's a strong likelihood that it will make you feel a little bit brighter. A little more positive.
What's more, it will be good for you, whilst tasting pretty great.
I promise.
I really do.
So if you're still with me on this, here's the recipe.
I've also included an outtake photo. The pup always wants to help, and her snout seems to be very useful for sniffing out blueberries...
Beetroot Blueberry Smoothie
Recipe my own.
Serves 1
1 small beetroot
A handful of blueberries
Half a banana
200 ml chilled milk (or almond milk)
50 ml buttermilk (optional)
Half a lemon
Chop the beetroot and banana into 1/2 inch cubes. Place in a blender jug (I used a stick blender) with the bluberries, milk and buttermilk. Blend until smooth.
Thin out with some very cold water to gain the desired consistency (I used about 100 ml water).
Add lemon juice to taste. I used the juice of about 1/4 lemon in the end.
The sweetness will depend on the blueberries and banana you use. I didn't add anything else this time, but you may want to sweeten it with a touch of honey or agave if it isn't sweet enough!

ReplyDeleteI recently discovered the wonder of beets and roasting my own. I used some citrus to make my first beet smoothie last week, but I love the idea of bananas! How does the buttermilk taste in this? I've never heard of using it in a smoothie!
